I will expect the worst and hope for the best, but will places like the MP garage have availability for overnight cheaper parking as opposed to hotel garages during the holiday weekend? I know that this is also the Taste of Chicago, so I am assuming that this is not an option...

They have shuttles that will take you to the train downtown and free parking. You can look at Evanston, too.
You could park at Midway, but I would drive North or go carless.
